Deep-fried prawns

Happy deep-fried prawns on sticks.
Serves 4


Ingredients

500g fresh large prawns, peel and devein
1 clove garlic, chopped fi nely
2 tbsp fish sauce
½ tsp pepper
150g self-raising fl our
150g water
1 tsp salt
Satay sticks
Oil for deep-frying

To garnish

Lemon
Lime
Lettuce
Chilli sauce or soy sauce dip

Method

  1. Season the prawns with garlic and pepper and skew one prawn from the tail up. Lay on a large plate.


  2. Mix the flour, water and salt together in a bowl. Then pour the mixture on the prawns and coat well.


  3. Deep-fry with sunflower oil until golden brown. Drain well.


  4. Using a big glass or vase arrange slices of lemon and lime at the
    bottom, and then layer the lettuce. Place the sticks in the glass with the prawns facing downwards. This creates a happy effect.


  5. Serve with a chilli sauce or soy sauce dip.
