Raspberry, strawberry and mango trifle

Trifle is the best pudding to have in summer, light, fruity and easy to make
Serves 4


Ingredients
450g Madeira cake
200g fresh raspberries
200g fresh strawberries
400g fresh ripe mango slices
5 tbsp Grand Marnier liqueur
400g ready-made custard
Pint of whipping cream

To garnish
100g freshly prepared raspberries, strawberries and mango slices.

Method
1. Slice the Madeira cake and place the slices at the bottom of a trifle dish. Top with a layer of mango, raspberries and strawberries.
2. Drizzle over some Grand Marnier liqueur. Add another layer of cake, more fruit and more Grand Marnier. Top with custard.
3. Whip the cream until it forms soft peaks. Smooth a layer over the top of the trifle and refrigerate for an hour.
4. Just before serving, decorate with more raspberries, strawberries and mangos.
