Scones

Scones are perfect for a lazy afternoon with a cup of tea
Makes 12


Ingredients
225g self raising flour
half tsp salt
1 tsp baking powder
50g butter
35ml buttermilk
2 tbsp sugar
1 large egg (beaten)
50g sultanas

Method
1. Heat the oven to 230°C, gas mark 8.
2. Sift together the flour, salt and baking powder.
3. Add the sugar and rub the butter into the flour.
4. Pour in the buttermilk and egg and stir.
5. Stir in the sultanas.
6. You should now have a softish dough that can be moulded and shaped. Bake in the oven for 8–10 minutes.
7. If your mixture turns out too stiff (dry) add some more buttermilk, if too wet add more flour.
8. This recipe can easily be adapted by adding other ingredients e.g. diced dried apricots.
9. Best eaten while still warm (but not too hot), traditionally served with butter or a spoonful of clotted cream and jam.
