Warm smoked salmon with fennel and lemon salad

A light dish of warm smoked salmon salad makes a perfect dinner party starter
Serves 4


Ingredients:
4 x 125g pieces of smoked salmon fillets
2 heads of fennel, thinly sliced
Mixed salad leaves
2 lemons, zest and juice
Olive oil
Salt and pepper
3 dsp chives, chopped
1 dsp dill, chopped


Method:
1. Pre-heat the oven to 180°c.
2. Place the salmon onto a roasting tray and bake in the oven for 5-8 minutes.
3. Put the fennel into a mixing bowl, add the lemon zest and juice, mixed salad leaves and drizzle with 2 dessert spoons of olive oil, season with salt and pepper and stir.
4. Portion the fennel into the middle of the dinner plates and sprinkle with the chopped herbs.
5. Remove the salmon from the oven and serve on top of the fennel salad.
