Gooey-Chewy Cookies from Victoria Eggs

This simple, 10 minute cookies recipe from Victoria Eggs is a weekend boredom-buster. We asked a little pair of hands to help test it out for us, and it was a resounding win.

So much so, we’ve been eating cookies every day since!

You’ll love how quick, easy, and relatively mess-free they are in comparison to some cookie recipes, and how child friendly they are too. A little help melting the butter, and with the oven and the children can make the rest independently. Great for learning new skills and confidence in the kitchen.

They take 10 minutes to make, and just 10 minutes to bake, so are ideal for your afternoon cuppa. Just make sure you grab one quickly – they won’t last long!

Ingredients

Makes 14-16

  • 125g unsalted butter
  • 100g caster sugar
  • 75g soft light brown sugar
  • 1 medium egg, lightly beaten
  • 2 teaspoons vanilla extract
  • 150g plain flour
  • ½ teaspoon baking powder
  • A pinch of sea salt
  • 100g dark chocolate, chopped into smallish chunks (or use milk chocolate, if you prefer)
  • A packet of Smarties or M&Ms

Method

  • Pre-heat your oven to  190°C/Gas Mark 5 and line two baking sheets with greaseproof paper or baking parchment
  • Gently melt the butter in a small saucepan over a low heat. Put both types of sugar into a mixing bowl, pour in the melted butter and beat well with a wooden spoon, then follow with the egg and vanilla and mix until combined. Sift the flour, baking powder and salt into the bowl and stir them in, then add the chocolate. You should have a pretty sloppy mixture.
  • Dot heaped dessertspoonfuls of the mixture leaving a good 4cm in between each one as they really spread out. Add a Smartie or M&M in the middle of each mound of cookie dough. Pop in the oven and bake for 8–10 minutes, until the cookies are turning pale golden brown. If they still look a bit soft don’t worry, they firm up as they cool down!
  • Remove from the oven and leave on the baking sheets for a couple of minutes to firm up, and then carefully lift the baking parchment on to a wire rack and leave to cool completely.

In our experience, these cookies don’t hang around for long once they’re cool enough to eat, so make sure to save a couple for yourself – even if you have to hide them from the kids!
