Fish Pie

Salmon is an excellent source of vitamins A and D, essential for healthy bones, teeth and muscles. However, you can substitute the salmon for any kind of white fish, such as haddock or cod.

Serves: 4

Ingredients

  • 700 g potatoes, peeled and diced
  • 450 ml of milk (or dairy-free alternative)
  • 25 g butter (or low-fat alternative)
  • 25 g flour
  • 4 fillets of salmon
  • 25 g reduced fat cheese

Method

  1. Preheat your oven to 200 degrees.
  2. Boil the potatoes for about 10 to 15 minutes until they’re soft, then drain them and mash with a little milk. 
  3. To make the sauce, mix the milk, butter and flour in a small pan and warm over a medium heat. Stir continuously until the sauce starts to bubble and thicken.
  4. Pour the sauce over chunks of fish in an ovenproof dish, then top with the mashed potato and sprinkle the cheese over the top. Bake in the centre of the oven for 30 minutes, until the top is golden brown. 
  5. Serve with broccoli.
