Peruvian Ceviche

Discover a mouthwatering Peruvian recipe, brought to you by World Food Tour’s Food World Cup series.

With four FIFA World Cup appearances under its belt, the Peruvian men’s national team will be looking to achieve its first victory in the competition this year in Russia.

Food in Peru is mostly prepared with four staples: corn, potatoes, amaranthaceae and legumes. Their most famous dish, ceviche, consists in marinated raw fish or seafood garnished with herbs and served as an appetiser.

Try this Peruvian recipe at home:

Ceviche 

Serves 6

Ingredients

500g white fish fillets

Juice of 8 limes

1 red onion, chopped

3 green chillies, chopped

Bunch of coriander, chopped

2 tbsp olive oil

Salt and pepper

Preparation

1. In a large glass bowl, combine the fish, lime juice and onion. The juice should completely cover the fish. Cover with cling film and place in the fridge for 2 hours.

2. Remove part of the lime juice and discard. Add the green chillies, coriander and olive oil. Season to taste before serving.
